This recipe can serve 12, and is ready in 30 minutes.

1.00 cups brown sugarbrown sugar
0.33 cups chicken brothchicken broth
2.00 teaspoons fresh ginger rootfresh gingerroot
1.00 teaspoons garlicgarlic
0.75 cups ketchupketchup
0.75 cups low sodium soy saucelow sodium soy sauce
5.00 pounds skinless boneless chicken thighsskinless boneless chicken thighs

Cooking Instructions


Step 1

In a small bowl, mix the first six ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. Divide remaining marinade between two large resealable plastic bags.


Step 2

Add 12 chicken thighs to each; seal bags and turn to coat. Refrigerate for 8 hours or overnight.


Step 3

Drain and discard marinade from chicken. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.


Step 4

Grill chicken, covered, over medium heat for 6-8 minutes on each side or until no longer pink; paste occasionally with reserved marinade during the last 5 minutes.
