RAW VEGAN CHOCOLATE CARAMEL PECAN BROWNIE CUPS! ☺

I'm sorry I haven't posted in a couple days! I've been dealing with some stress and things, and been super busy but I'm finally starting to free up time in my life and will get to posting more health related blog posts and some recipes as well! :)

Friday I went swimming in the Gulf and it was amazing. The wind created amazing waves, and felt really good to swim in the ocean. ❤

Went to a pool party/potluck yesterday and chilled in a jaccuzi for awhile sharing wonderful raw vegan food and having great discussions!

And today, I swam 20 laps in the community pool in our neighbourhood. First time swimming laps, I usually just swim in the ocean or a lake haha I definitely want to get into doing more practicing way more often, felt so good!! ❤

This here is a recipe for my RAW VEGAN caramel brownie cups! Shiiiizzz I really out-did myself with these bad boys. They're seriously out of this universe haha

If you have a sweet tooth, get ready for these chocolate caramel explosions! These are seriously so delicious and decadent it's a bit unreal. The flavors of chocolate and coconut and caramel just go so perfectly together, gah! I love it if you couldn't tell ;)

Okay, I'll stop rambling on now.. you guys must be ready for the recipe!!

RECIPE!!:

Yields 9 large brownies 😍

Brownie base:
1 1/2 cup coconut flour
5 large soft dates
1/4 cup maple syrup

Blend until chunky/doughy

Caramel:
4 tbsp raw tahini
3 large soft dates
1/8 cup maple syrup
3 tsp coconut nectar
Pinch of pink sea salt (optional)
Dash of vanilla extract

Place brownie in a pan of choice, I used square non-stick brownie cup pan, and pat down to desired thickness/shape.
Place caramel inside the brownies and top with pecans!
Place in the refrigerator until ready to eat! 😍
