RAW VEGAN CHEWY TWIX BARS!

This is probably the best thing I have ever created. Maybe they're equal to my raw brownie bites, maybe. These are on another level of deliciousness.

These raw vegan chewy, caramel-y, chocolate-y, delicious "twix" bars are so decadent. Your taste buds will thank you for blessing them with this divine creation! Yeah. They're that good. To boot, they are so fun to make! I used to LOVE baking when I was not a raw vegan, I would make cupcakes, cakes, brownies and cookies all the time, and when I went vegan I just had to step up my creativity with recipes to make it work and I did. Now I am making it work as a raw vegan and I find it such a relaxing experience to just focus on creating.

Creating recipes and taking beautiful photos of the end results. I love the process, what can I say! And the best part, testing the treats! I can't believe how delicious these turned out. I've only ever tried the real Twix bars maybe twice, but these remind me JUST like them, the taste and the looks!

RECIPE!!!
RAW VEGAN CHEWY TWIX BARS

Cookie layer:
2 cup coconut flour
1/4 cup maple syrup
1/8 cup coconut nectar

Caramel layer:
6 pitted dates
1/4 cup tahini
Pinch of Pink Himalayan salt
2 tsp vanilla extract

Chocolate coating:
1/3 cup melted coconut oil
1/4 cup cacao powder
1/4 cup maple syrup

To make the cookie: stir together the ingredients until slightly crumbly and moist. It should hold its shape when pressed between two fingers. If it's still too crumbly, add some coco oil (or water). Press into the bottom of a parchment paper lined bread loaf pan. Place in the freezer.

To make the caramel: soak the dates in warm water for 10 minutes (then keep this water for the recipe). Blend all ingredients until smooth, thick and caramel-y! It should taste delicious. Spread evenly onto the cookie layer and place back in the freezer until solid.

To make the chocolate: whisk the ingredients together until you have liquid chocolate. Take your delicious caramel-cookie concoction out of the freezer and slice with a sharp knife into bars. Drizzle the chocolate over the bars, or dip the bars in the chocolate. Keep in the freezer and enjoy when you are ready!
