In The Kitchen - Spicy Lentil Soup
So we had a nice cold front pass through here over the past three days, so on Tuesday I decided to make what is basically a 'cheat' soup, but very tasty indeed.
I work from 09h00 to 18h00 and still need to commute home so preparing dishes which take a long time is not an option hence this quick and very tasty and filling soup.
Ingredients - prepared Spicy Red Lentil and Chourico soup, Smoked Chourico Sausage and a tin of Red Kidney Beans
Simply chop the chourico and crisp it in your soup pot (I used a bit of coconut oil and a splash of olive oil.
Browned and slightly crisp chourico sausage
Add to the pot the packet of red lentil soup and the rinsed red kidney beans.
Allow to simmer gently for twenty minutes or so. At this stage one can get creative and add smoked paprika or a chopped green chilli..... but this really is a meal in a bowl We served ours with crisped croutons and curry sticks
Curry breadsticks
Voila, half an hour to a really affordable and tasty dish.
Thanks for reading, and for those who have come across me for the first time.. I usually do real cooking, not assembly like this {smile}
Yummy!!! Where is the recipe for the curry bread sticks? Here in the Lowveld we don't have shops that sell them :(
I got all those ingredients from Checkers.... sometimes we crumble blue cheese on top, sometimes Feta if we feel it needs some salt .... very versatile and damn tasty
I will ask our local Checkers to order the curry bread sticks, they look divine!
They are and at R5 each.... a treat.
