Korean Black Bean Noodles ~ Jjajangmyeon Recipe
This dish is a lot of fun to cook and eat.. black bean noodles. I really like the balance of salty and sweet in this dish. VIDEO RECIPE at the end of this post.
Korean Black Bean Noodles ~ Jjajangmyeon Recipe
INGREDIENTS:
1 pound cooked noodles
1 to 1 1/2 cups cubed potatoes
1 cup cubed zucchini
1 cup diced onions
1 tbsp. minced garlic
2 tsp. minced ginger
1/4 cup black bean paste
1 cup water or broth
2 tsp. cornstarch/1 tbsp. water slurry
1 tbsp. oil - I used peanut oil
Cook noodles according to package instructions.
In a pan on medium to medium high heat add oil, minced garlic
and ginger and diced onions. Stir and cook for 1-2 minutes.
Add in black bean paste, stir and cook for a couple minutes.
Add in potatoes, stir, add in rest of veggies and stir.
Add water/broth and sugar, stir, bring up to simmer and cook
for 10 minutes or until veggies are tender.
At end add slurry in slowly to get thick consistancy.
Serve over noodles or rice.
