Creamy Yummy Butternut Squash Pasta ~ Food Photo Shoot & Video
This creamy butternut squash recipe can be served as a soup or as a sauce for pasta. Either way it is good! Lots of flavor with spices of sage, chili powder, garlic and cayenne powder. Can be served as a side dish or entrée :) Enjoy.
Creamy Yummy Butternut Squash Pasta
INGREDIENTS:
1 pound of tri color rotini pasta
3-4 cups diced squash
3-4 cups chicken stock
1/2 cup to 1 cup half and half or cream
1/2 cup shredded parmesan cheese
1 cup diced onions
1 cup diced celery
1 cup diced carrot
1 cup diced apple
1 cup diced tomatoes
2 cloves sliced garlic
1 tbsp. chili powder
pinch or so of cayenne pepper
salt and pepper
fresh sage leaves

Friend, good morning, quick question~ does this freeze well? I was gifted tons of butternut squash and if this can be used as a sauce and soup I'm thinking of cooking it all and freezing it. Thanks!
Hey @artedellavita For this recipe take it to the point of pureeing and then freeze in containers. When you are ready to use then add more seasoning and cream if you wish. You can cube the squash, partial freeze, bag and then freeze. Or you can cook, puree and freeze. Leave some head room at the top of your containers for some expansion. Sounds like a wonderful gift!
