Baked Cod in Tomato Sauce Recipe

Baked Cod with Tomato Sauce
INGREDIENTS:
1 -2 pds cod fillets
1 28 oz can diced tomatoes
1 cup diced onions
1 small diced bell pepper
2 tsp. minced garlic (4-5 garlic cloves)
1-2 tsp. pesto or 1 tsp. basil
2 bay leaves
12-15 capers - drained
1/2 cup sliced olives - I used Spanish and Kalamata
salt and black pepper

In a pan on medium heat add oil, diced onions, bell peppers, minced garlic, salt and black pepper.
Cook and stir for 2-3 minutes.
Add capers, cook and stir for an additional minute.
Add diced tomatoes and juice and basil pesto. Stir.
Add bay leaves, bring up to a simmer and cook for 5 minutes.
Transfer sauce to baking dish. Add olives and place fish on top.
Season fish with salt and pepper.
Bake at 400 degrees for 15 to 20 minutes or until flaky and done.
Serve with pasta or rice.
Enjoy.
