My Journey to Becoming Cooking Ninja - Cream Puffs

As my journey towards becoming cooking master continues, so the recipes I try to prepare are more and more challenging. This time, cream puffs found themselves on the menu. It is one of my favorite desserts and here in Serbia we call them "Princess donuts".


Ingredients we need:

  • 2 cups of water
  • 1 1/2 cups of oil
  • 300 g of flour
  • salt
  • 7-8 eggs
  • 1 baking powder
  • 150 g of vanilla pudding
  • 200 g of sugar
  • around 120 g of butter
  • 8 cups of milk
  • 200 g of whipped cream
  • 100 g of black chocolate

Put the water, oil and a little salt in a saucepan and cook until boiling. When it boils, slowly add the flour, constantly stirring with mixer. Stir until it gets thickened. Remove from the heat and after few minutes you can add eggs. Separate yolks from egg whites mix them nice and then add it to the mixture. Keep stirring the mixture until it gets unified. You can use electric mixer or you can manually mix by spoon.

Leave the dough to completely cool off.

Preheat oven to 220 degrees. Use syringe or spoon to create donuts. Just be careful, do not make them too big because dough will rise a lot during baking.

Put baking tray in the oven and bake it on 220 C (430 F) for 25 minutes. This is important - do not open the oven during baking! Otherwise, the donuts will lose their size.

While we are waiting for donuts to be baked, we can prepare the cream. I'll prepare two different fillings, pudding and a whipped cream and combine them for best results.

Pour 6 cups of milk in a saucepan and stir until it boils. Then add 150 g of pudding and keep stirring on a lighter temperature until it gets thicker. Wait for few minutes and add butter into it and mix until the mixture is unified. Let it cool off.

To prepare whipped cream, add 200 g of cream powder and two cups of milk and whisk with mixer until it becomes thicker and creamy.

When everything is prepared and cooled of, cut the baked donuts in half, fill one side with pudding and the other with whipped cream. Then put them together.

You can sprinkle cream puffs with powdered sugar, but I prefer melted chocolate as a topping.
