Quick Recipe Idea - Baked Potatoes

Hello everyone, and welcome to my kitchen!

Let me start by saying that I am a terrible cook, but I try to learn as much as I can. I find it more and more interesting, playing with flavors and spices, especially these days when we are fasting. I am by no means vegetarian or vegan, but I'm pretty sure today's dish is for vegetarians too.

So, this meal is for two, pretty simple but delicious. It was enough for two of us, for breakfast or dinner, depending on your appetite. I find it more interesting to cook when we are fasting, because I associate fasting with bland flavors and being hungry, and it's almost a challenge to make every meal delicious. I may not know how to cook, but I love to eat and I love strong flavors and spices. Let's get cooking!

You will need:

  • 4 potatoes
  • Olive oil
  • Peper
  • Salt
  • Garlic (powder)
  • Paprika
  • Breckland thyme

For the first part of the recipe you will need a machine or some mad skills, I have a husband for that :) Wash the potatoes, leave the skin on and use some skewer through them and cut it in a spiral motion. So it looks something like the photo. In this way, it will bake faster, it will be crispy on the outside and flavored all the way through. I used a separate bowl to mix all the spices with the oil, and brushed it all over the potatoes. Bonus tip is to add a bit more salt than you are used to, potatoes need it.

Lay the coated potatoes in the baking tray (I always use parchment paper, it's way easier to clean), and use the rest of the spices mix (if you have any left). Now they are ready for the oven. I usually preheat the oven to 180 degrees (Celsius) and it takes about 30-45 minutes for the potatoes to bake. I do like to turn them, at least one time, and coat them with the spices if I have some left.

Take them out of the oven, add some olives and pickles if you like (I can eat olives until I get sick), and take some amazing photos while waiting the potatoes to cool down. We added some home-made ajvar, that is a specialty here made from peppers, and it adds to the flavors so well, a bit spicy and hot, but not too much.

I love this baked spiral potato. It must be so crispy like that. I'm not sure I would add anything else to this dish... maybe melt some cheese on top or serve with some sour cream. What a great idea to eat the potato with ajvar.

Yes, cheese or sour cream sounds delicious, but I am fasting now so I can't eat dairy.
