Additives, Added in Food during Processing (Part 4)
Additives
Additives are chemical compounds that are added in Food during processing for many purposes like to enhance taste, color or for the purpose of preservation like colors, flavors, stabilizers.
I described about how the additives are used to Improve Taste of the Food. Here is the next non-preservative effect of additives that is:
Improve Nutrition
If we examine food which is present in its natural state, it lacks few nutrients that are essential to live a long healthy life. These are of two types that are:
1.Fortification
When food is deficient in some nutrients these are added by artificial means, that is known as fortification. This is the addition of new nutrients into the food. As iron is added into flour.
2.Enrichment
When food is processed under critical conditions or even through a minute process, food nutrients are lossed. To recover those loses we have to add nutrients artificially. This process is known as enrichment.
