Princess Doughnuts is how the name of this dessert translates! (Recipe)
Princes Krofne = Princess Doughnuts!
This is a traditional Croatian cake and I have translated the recipe and taken photos for each step in the process.
Ingredients
Dough
100 ml of cooking oil
200ml of water
6 tablespoons of flour
3 eggs
pinch of salt
Filling
3 egg yolks
300ml milk
5 tablespoons of sugar
3 tablespoons of flour
100 grams of margarine
1 small package of Vanilla sugar
icing sugar
2 x 100ml thickened cream (for making whipped cream)
Step 1
Boil your water with the oil in it, once it is boiling take it off the stove.
Then add the flour + your pinch of salt and hand whip it, until the mixture thickens, then leave it to cool down to a lukewarm temperature.
While it is at a lukewarm temperature, add the three eggs and using a mixer mix it all up.
Step 2
Place baking paper into a baking tray, preheat your oven to 220 degrees celsius.
Using a decoration syringe (I use the piping bag type) make golf ball sized spiral towers, starting from the middle and working your way up to the tip of the "tower".
Place in the oven and bake for 25 minutes, DO NOT OPEN THE OVEN DURING THE FIRST 15 MINUTES. After the first 15 minutes of baking you can open your oven and check to see if they are golden in colour. It should take approximately 25 minutes.
Take them out of the oven and let them cool down.
Step 3
Now we are cooking the filling.
Start cooking your 200ml of milk.
In a separate bowl, mix your sugar, flour, vanilla sugar, egg yolks and 100 ml cold milk.
Mix this with a mixer.
Once your milk on the stove is cooking, add this mixture into it and mix with a spoon until it thickens.
Once thickened, let it cool down to a lukewarm temperature.
After which you add your margarine and mix it again with a mixer.
Step 4
In two separate bowls mix 100 ml of thickened cream in each bowl, using a mixer.
Then mix the whipped cream from one bowl into the above made filling mixture, using a mixer.
Step 5
Cut your baked little dough/towers in half and they should be hollow inside.
Using the decorating syringe fill the bottom half of the baked doug, again in a spiral motion. Starting from the middle and working your way outwards.
Then when you have done this for all of them.
Repeat this with the whipped cream.
Then simply take the top halves and pres down gently onto the whipped cream.
You can decorate them with a bit of molten chocolate when serving!
This is a very popular cake in Croatia and the surrounding countries, my children love them.
