Home Made Vegetable Soup - With Carrots and Rice
Yesterday was one of those days when everything works out the way you didn't plan it, so I didn't put up any of my cooking recipes.
Today was the childrens first day back at school after the spring holidays. I managed to catch up with everything.
Soup is healthy, soup is tasty, soup is so simple to make.
2 medium sized carrots
1 onion
1 handfull of rice
parsley leaves
salt and pepper
butter
thickened cream (your choice which one)
water
Step 1
Dice up the onion and lightly fry on butter until it softens up, then add a handful of rice and fry for a minute to two minutes, then add 1 litre of water and cook for another 10 minutes.
Step 2
Grate the carrots and add them along with all the other ingredients and cook for 10 minuta.
Note:
1- If you use thickened cream, you can add it together with the carrots and spices, then you have to cook for an extra 5 minutes.
2- Feel free to add soup noodles if you like, add them the same time you add the carrots.
This is a very tasty and light soup, opens up the appetite for the main meal!

That looks delicious. I wish my wifed like cooked carrots better as I want to go home and make that now.
