Pumpkin Bake: Perfect Side Dish For South African Type Braai (BBQ)
This is by far one of my favorite side dishes and is always a hit at a braai (or a BBQ)! This Pumpkin Bake is best served warm and compliments savory meals, or it can even be served as a dessert! It's a quick and easy recipe, but what I like most about it is that it is AFFORDABLE, and somewhat healthy (it does contain a lot of sugar).
Let's start with the ingredients you will need:
- Diced pumpkin (or butternut)
- 250 ml Cream (one cup)
- 250 ml Sugar (one cup)
- 250 ml Flour (one cup)
- 3 Large Eggs
- Cinnamon
- Butter to grease the dish
Instructions are as follows:
- Preheat oven to 180 degrees (350 Fahrenheit)
- Boil and soften pumpkin and then mash until smooth (or you could use a blender)
- Beat eggs and sugar together and then add the mixture to the pumpkin
- Add the flour and cream
- Mix all ingredients together
- Spoon into a lightly greased dish
- Bake in a prepared oven for 1 hour
- Sprinkle generously with cinnamon when hot
