INGREDIENTS:
Onion - 1 pcs.;
Celery - 1 pcs.;
Carrots - 1 pcs.;
Garlic - 1-2 pcs;
Bacon - 3 slices;
Olive oil - 3-4 tsp;
Forcemeat (pork or beef) - 500 g.;
Dry red wine - 200 ml;
Tomatoes (in own to juice) - 400 g.;
Tomato paste - 2 tsp;
Milk 2.5 % - 250 ml;
Nutmeg - 1 tsp;
Bay leaf - 1 pcs.;
Butter - 50 g.;
Flour - 1 tsp;
Macaroni sheets - 12 pcs;
Parmesan - 150-200 g.;
Salt, pepper - on taste.

Cooking:
Step 1:
Slice the celery, onion , carrots and garlic. To frying pan we pour some olive oil and add onion and garlic. They should be fried up to golden crust, 2-3 minutes constantly mixing.

After we add celery and carrots. Cooking 5 minutes.

Step 3:
За тем We add three slices of finely chopped bacon, we stir and 3 minutes we cooking. Next ingredient at us - 500 grams of the forcemeat. We hash with all products and we cooking of the minute 3-4.

Step 4:
We add further to the forcemeat 200 ml of dry red wine. We mix and we continue to cooking 10-15 minutes on average fire. We add 400 grams of tomatoes in own juice (together with juice, of course), and as well two tablespoons of tomato paste. Salt and pepper on taste. All carefully mix and cooking 40 minutes.

Step 5:
Now it is possible to proceed to the second part of the recipe, namely to preparation of the sauce “Bechamel”.
We pour 250ml. milk. We add the pinch of nutmeg, and bay leaf. All carefully mix and cooking 10 minutes.

Step 6:
In the frying pan to kindle 50 grams of butter. We add 1 table flour spoon and we mix, until we will bring to golden colour. We remove bay leaf and thin jet is poured into frying pan milk, constantly mix. We further add pinch salts, we stir carefully and we give to be insisted of minutes 10.

Step 7:
We add 1-2 table spoons of the sauce "Bolognese" (the first we prepared exactly him ), small amount of olive oil and we distribute evenly to all area of the utensils.

Step 8:
We spread the first layer of macaroni sheets. We from above lay the layer of the sauce “Bolognese”.

Step 9:
Following which sauce layer goes “Bechamel”. Then we strew all this Parmesan.

Step 10:
Repeat until after filling. The last macaroni layer we lubricate remaining “Bechamel'” and from above we generously strew Parmesan. We close with foil and we give to stand of minutes 10 at room to temperature.
Preheat the oven at 180°C. We put our dish of minutes by 40. But just in 30 minutes it is necessary to remove foil.
