Fantastic post. Have always wanted to know how to can using a wood fire. Couldn't figure out how to maintain the right pressure amount. Genius using the metal plate. Saving this for future use.
Yeah, the metal plate works great! It's so simple. Just cover and separate the fire from the pot. And then remove when you want heat to come back.
