Rich And Creamy White Wine Soup!
Ingredients:
2 tbsp butter
1 chopped onion
3 cups chicken or vegetable stock
1 1⁄4 cups white wine
1 sliced carrot
1 bay leaf
2 sprigs thyme
4 large slices bread
6 egg yolks
1 1⁄4 cups cream
Instructions
Melt 2 tbsp butter in a medium-sized pot over medium heat.
Add onions and cook until lightly browned ~10 mins.
Add stock, wine, carrots, bay leaf, and thyme ~10 mins on low heat
Toast bread slices on both sides and butter
(For extra creamy soup, this step is optional) Strain the soup and continue simmering on low heat.
In a mixing bowl, whisk together the egg yolks and cream.
Whisk in 1 cup of hot stock to the egg yolks and cream, then slowly stir mixture back into the pot.
Add salt and pepper according to your preference.
(Optionally, you may want to add some lemon and parmesan cheese)
Heat soup to warm serving temperature, but not too hot, you don't want it to be boiling hot!

Cooking with wine is one of my favorites.
You know those inexpensive bottles of white wine that are often on sale at the front of the grocery store? The cheap wines, you probably wouldn't want to drink, those are the perfect ones for cooking at home and making delicious meals! :-D
Wine makes a perfect symphony of a great meal! ;-D
