Dehydrating Scallions from the Garden. #WelcomeToMyGarden 1/2018
Well- we have another freeze coming to Texas tonight and I am running out of chives. So let's go out there and harvest and process some chives. (update: My friend informed these are Scallions aka Green Onions- so note that.)
They are big and strong. I'll cut them then put a support frame and sheet over them.
Give them a good rinsing- after all... they hang out in the dirt.
Laying out- I'll give them a pat dry.
Alright- we are ready to start processing!
Using scissors is an easy way to chop them.... OH- MY EYES ARE STINGING!
Okay! We are ready to put the trays together and get these onions dried!
We'll do the lowest setting @ 95 degrees for 24 hours. Herbs are so delicate- they preserve their nutrients and flavors best when dried low and slow.
They should be ready to jar when this fellow gets home from school tomorrow!

Very nice! I have freezer space so I freeze mine, chives as well as parsley and dill, all freeze very well. I noticed that yours are more like green onions tips..are they? I use the chive plant that grows in a bunch and has no bulb.
Yes! Green Onions- My friend Jeff informed me. I planted them last winter after using them in a recipe and they just keep on keeping on ... So thankful for them! :)

Those look like bunching/green onions (a.k.a. scallions), not chives. Close enough though as far as flavor goes.
That might be what they actually are! I bought them at the store last winter and planted them after using for a recipe-- couldn't remember exactly which one it was- they are big and old... they keep going thru all seasons as long as covered when a freeze comes.
Yep, I’d say almost definitely bunching onion then. Chives are rarely harvested and sold as a whole plant.

I have both bunching onion and garlic chives. For some reason I could never get my common (onion) chives to germinate.

They have become part of the family. I wonder how big they'll get and how many years they'll live? I guess we'll see!
They’ll eventually flower if you let them. The flowers are actually edible too.
Yes- They had some little white flowers at one point... Maybe I cut them? I can't remember. Well- I'll keep 'em around and care for them as long as they want to be here. Very thankful to them.
