Preparing Simple Meals For An Elderly Parent...

When you find yourself having to assist with making meals for an elderly parent who is extremely fuzzy, old-fashioned comfort food comes to mind.


Taking care of another persons meals can sometimes become a bit overwhelming, especially when your very own schedule is already full. It can also be challenging when that person doesn't like spices either. Salt, butter and ugh....gravy of all things are the preferred condiments of choice.

I happened to try making a very large pan of meatloaf for my father one day. I cut it up into individual serving sizes and froze them. I wanted it to be as easy as could be, he could just re-heat it on low and not have to cook for himself. You can imagine how surprised I was when he called to let me know that it was the best meatloaf he ever had. He even said I could make that again for him any time. Whew, who knew a simple, no frills meatloaf would become a monthly job for me.



"Making Meatloaf"


This is so simple and very tasty, you can even take my fathers word for it! ;-)

Ingredients:
  • Ground Beef (4 lbs.)
  • Chopped onion ( 1 large)
  • Egg (2-3 eggs)
  • Breadcrumbs (1 1/2 c.)
  • Grated Ramono Cheese (1/2 c.)
  • Salt & Pepper ( 1 tsp. salt & 1/4 pepper)
  • Honey Barbecue Sauce (1/3 c. for mix) (1/3 c. for topping)

    Depending on how big a batch you are making will depend on how much of each ingredient you add. I do four pounds of ground beef when I make a large pan. You can adjust the amounts accordingly.



    "Mixing Ingredients"


    Chop the onion, add all your ingredients together in a bowl and mix well.



    "Place in Pan"


    Place your ground beef mixture into a loaf pan and press down lightly to make it all even.



    "Honey Barbecue Sauce"


    Spread your honey barbecue sauce over the entire top of the meatloaf and place in a preheated oven at 350 degrees. Cook until the sides begin to pull away from the pan, you don't want to overcook it if you are planning on re-heating it at a later time.

    Cool well, slice the meatloaf into single serving sized pieces and place on a cookie sheet. Put the meatloaf into the freezer and freeze overnight. Remove from the cookie tray and place your single servings into an appropriate container for placing in the freezer. Be sure to add meatloaf and the date when labeling.

    This is one of the simplest ways to help an elderly parent with their mealtimes. It doesn't take much effort to make it in huge batches at a time. It sure makes life a little be nicer for all concerned. Bon Appetit!
