Bitter Gourd Soup for the Soul

This amazing soup comes complete with goji berries which is a super fruit and adds the perfect sweetly sour taste to the soup. I know that bitter gourd can be well, super bitter for most but the bitter taste lessens when cooked in soup. The meat used gives the soup a savory umami flavor and the meat is usually perfectly braised so it melts in your mouth. This dish is usually made with pork but another variation I've had was chicken for people who don't eat pork. It's super delicious both ways and you can feel the warmth of it on your soul.

It was great with the day's meal, being back in Bangkok and recouping for our upcoming adventures. Bitter gourd soup is usually eaten as a soup dish to sip from your tablespoon during meals with rice to help take away the dryness of the rice after many bites.

It's definitely one of my favorite soups of all times and once you get the bitter taste down, you'll probably be a fan for life too. Love those goji berries!
