How to Make Colombian Butifarras

We have a huge variety of fruit and other natural products, and this has combined over the years with influences of other cultures making for an exciting fusion of different tastes.

This Sausages are perfect for party food. This recipe is very popular in the Caribbean coast of Colombia. I used to see them in the windows of the small family restaurants which we call "Piqueteaderos". Or sometimes in the middle of the Colombian's streets, you can see somebody selling them.

Colombian Sausages or Butifarras

Ingredients

  1. 500 grams beef
  2. 200 grams pork belly
  3. 1/2 teaspoon ground cinnamon
  4. 1/2 teaspoon cumin
  5. 1/2 teaspoon ground black pepper
  6. 1 clove garlic or teaspoon of garlic paste
  7. 1/2 teaspoon salt
  8. 1 shot dry wine
  9. 1 teaspoon vinegar
  10. 2 chicken bouillons
  11. Hog casings soaked in water and lemon or Food wrap or non PVC (see method 2)
  12. Thread to tie

Preparation

Method 1:

  1. Skin the belly pork and chop finely.
  2. In a food processor grind the meat, skin the bacon and garlic.
  3. Add the other ingredients and mix well to form a uniform mass
  4. Wash the tripe with water and tie one end with thread.
  5. In a non-metallic bowl add all other ingredients except the chicken bouillons.
  6. With the aid of a wide-mouth funnel or plastic bottle cut in half, manually fill the casing with the mixture.
  7. Leave a little loose because cooking causes the casings to contract.
  8. Tie the ends with fine thread.
  9. Cook in a pot with enough water to cover and 2 chicken bouillons, over a medium heat for 30 minutes.
  10. When they have cooked about 20 minutes, pinch them gently with a toothpick to remove the air and let cook for another 5 or 10 minutes more.
  11. They can be served with bread,corn or cassava rolls .

Method 2

  1. Skin the belly pork and chop finely.
  2. In a food processor grind the meat, skin the bacon and garlic.
  3. Add the other ingredients and mix well to form a uniform mass.
  4. Grease palms with oil and take a bit of dough.
  5. Take a long strip with of it and place it inside the plastic, trying to remove the air.
  6. Clamp the end and every 3 cm to form a chain of sausages or sausage.
  7. In a pot of boiling water, cook for 20 to 30 minutes.
  8. When they have cooked about 30 minutes, pinch them gently with a toothpick to remove the air and let cook for another 5 or 10 minutes more.
  9. Water is then removed and the plastic is removed.

Note:

You can make into many different sizes and thicknesses.
Can be frozen before or after cooked in the same plastic.
