Delicious Roasted Vegetable Bake

This is a tasty, healthy dish with roasted vegetables, coconut milk, and balsamic vinegar. IMG_0904.JPG

Ingredients:
• 1 Tablespoon oil
• 5 cloves of garlic, chopped
• 1 small onion, diced
• 2 carrots, peeled and sliced
• 1 medium sweet potato, peeled and diced
• 5 oz baby spinach, chopped
• 2 Tbs balsamic vinegar
• 1 400 mL can coconut milk
• 6 oz ricotta cheese
• 5 eggs, slightly beaten
• ½ tsp salt
• ½ tsp pepper

Directions:

Preheat the oven to 425. In a large ovenproof pan, heat the oil on high until hot.
Add the vegetables except for the spinach. Add the garlic. Stir all around and put it into the oven.
Roast for 35 minutes, or until the vegetables have started to brown. Add the vinegar and set this aside.

Reduce the oven temperature to 350, and butter a baking dish.

Mix the eggs, coconut milk, cheese, salt, and pepper in a large mixing bowl. Add the vegetables. Pour this all into the baking dish. Bake for 40 minutes, or until a knife inserted in the center comes out clean.
