Vegetable Cous Cous nuggets - easy and delicious recipe perfect for a summer dinner!

Cous cous is one of my top summer dishes. Versatile, quick to prepare, light and delicious, perfect for an aperitif with friends or for lunch to take in the office, like this citrus couscous that we have prepared some time ago!
Pretty much, though, we prepare a little too much!

This is a quick recipe to re-use the cous cous advanced in another variant: fried couscous nuggets! A true goodness!

Here's how to prepare them!

Ingredient
300 grams of cous cous with vegetables
2 eggs
100 grams of Parmesan / Pecorino cheese
salt and pepper
4/5 tablespoons of grated pan
100 grams of cheese (mozzarella)

For the plating
an egg
parmesan
Pepper and salt
bread crumbs

In a bowl, add cous cous to grated cheese, eggs, salt and pepper and mix. The dough must be soft but compact: if it is too smooth, add the grated bread, if too hard and granular a drop of water.
Formate the meatballs, adding a piece of cheese to the center.
For frying, beat the eggs with cheese, salt and pepper.
Pass the couscous nuggets into the egg whisk and pass into the grated bread.
