SWEET PRETZELS

The delicious aroma of a soft pretzel is recognized at a great distance. I still do not understand how such a simple piece of bread can be so delicious. But in reality, in the kitchen you do not have to understand many things, just enjoy them and that's it.

I think I've never imagined enjoying a soft pretzel at home, but now that I think about it, it's ideal for a meeting, a party, even to get together to do team work.
Ingredients (For about 8 medium pretzels)
Warm water (45ºC) (1 and 1/2 cups - 375 ml)
Brown sugar (2 tablespoons)
Flour (3 cups - 450 gr)
Force flour (1 cup - 150 gr)
Bakery yeast (1 pack - 6 gr)
Salt (1 and 1/8 teaspoon)
To season
Melted butter (2 tablespoons)
Coarse or flaked salt (to taste)
Poppy seeds (to taste)
To bathe them
Warm water (45ºC) (2 cups - 500 ml)
Sodium bicarbonate (2 tablespoons)

Utensils
Baking paper (1)
Kitchen brush (1)
Container (1)
Steps

Dissolve the yeast, brown sugar and salt in warm water.
Add the flour and knead by hand or with a food processor until it is an elastic and soft dough. (I had to add some more flour on the fly to get that consistency).
Pass the dough through a container greased with oil, cover with a cloth and let it rest for an hour or until it doubles its volume.
In a deep dish, put the warm water and sodium bicarbonate. Prepare the baking sheets with baking paper.
Cut the dough into 8 pieces. Give shape of elongated curl to each piece until we have enough to shape it. (in the video you will see how to give the desired shape).
Bathe pretzels already formed in the bicarbonate solution. Dry the excess water in a kitchen paper and place on the baking tray. Let rise 15-20 minutes more.
Preheat the oven to 230ºC.
Brush the pretzels with the melted butter and sprinkle the salt and poppy seeds to taste.
Bake for 8-10 minutes until golden brown.
