Hello friends, today I want to offer you the recipe of a classic in Venezuelan cuisine at Christmas, the black cake!
ingredients
For the Cake:
6 Eggs
1 pinch of salt
1 tsp. of Canela
3 tbsp of shredded papelón
3 tbsp of cocoa powder
1 ½ cda. of Baking Powder
2 cups Butter (500 gr.)
1 ¼ cups of Mascabada or Morena Sugar (250 gr.)
1 ¼ cups of White Sugar (250 gr.)
5 ½ cups of Leavening Wheat Flour (610 gr.)
For Fruits:
Nuts
Almonds
Hazelnuts
Prunes
Black raisins
Sultanas Raisins
Candied Fruits
3 cups of rum or brandy
Preparation
The fruits:
-Kind the Fruits in advance in a well-covered glass jar and keep it in a dark place. This technique is used to soften their texture and impart flavor, they can carry out the process a week before preparing the cake.
-When greasing and flour the mold, spread the shredded Papelon and a bit of Dried Fruits without macerating, Nuts, Hazelnuts and / or Almonds to get it decorated when turning it over.
The cake:
-Reheats the oven to 180 ° C.
-In a bowl, beat the butter along with the two types of sugar.
-Then, add the flour gradually little by little.
-Add the rest of the powder ingredients and Eggs one by one.
- Immediately afterwards, little by little incorporates the macerated Fruits with enveloping movements.
-Wet the mixture in the mold and bake for about an hour or until you insert a toothpick and it comes out clean.
