What It Means to "Eat the Rainbow"?

Nutritionists often tell people to "eat the rainbow", a simple reminder that you need to focus on eating a variety of fruits and vegetables in order to get the needed vitamins and nutrients. Let's take a look at the details, and why is always a good idea to eat a mix of colors.

Red is for lycopene, a natural pigment linked to good heart health and low risk of cancer.

Dark purple is for anthocyanin, the antioxidant protecting the cells and reducing the risk of stroke.

Orange and yellow is for the well known beta-carotene, a precursor of vitamin A, needed for our immune system, a good vision or a healthy skin and mucus membranes.

Green is for a mixture of nutrients, such as indoles and saponins (linked to a reduced cancer risk), or folate (folic acid and vitamin B9) which is essential for the body to make DNA, RNA, and metabolise amino acids required for cell division.

White is for interesting things, such as allicin, found in garlic and known to have antiviral and antibacterial properties, or quercetin, found in onions and helping to reduce blood pressure.

That looks like a healthy and also delicious salad. Never heard of this eat the rainbow term, but makes total sense and I will have to try something like this soon. Healthy and tasty...!
