We do a S-L-O-WWWWWW cook - 6 or 6.5 hours at about 225 F - until the whole house smells like bacon, the dogs are begging, and the neighbors are knocking.
This happens only once a year. Only at the Airkooled Kustoms Charity Car Show in Hazel Green, Alabama.

Thanks! Got so excited I forgot about that part! Spook assembled the whole log of loveliness last night and let it sit overnight (not necessary - but nice). Today it'll go into the oven at 225 F for a low, slow cook - about 6 to 6.5 hours.
