Easy Peezy - GLUTEN FREE LEMON MERINGUE PIE - Recipe, so easy my 7 year old child made it - Bon Appétit!!

This is a Gluten Free version of one of my childhood favorites!! Don't waste your time on store bought, chemical infused, toxic versions when you can whip up one of these babies in less that 15 min!!

Here's what you need to do to make the magic happen.....

INGREDIENTS

CRUST

1.5 Cups Organic Gluten Free Sugar Cookies/Graham 'like' crackers of your choice
1/2 Cups Organic Sugar
1/4 Cups Grass Fed Butter Melted

*Crush cookies and mix together with melted butter then sugar and press into a pie pan. Set aside. For this recipe I purchased an already made crust.

Filling

1 - 14oz Organic Condensed Milk
1 tsp Organic Lemon Zest
1/2 Cup Fresh Squeezed Organic Lemon Juice
3 Large Organic Cage Free Egg Yolks (Whites put aside for Meringue)

Meringue

1/4 Cups Organic Cane Sugar
3 Large Organic Cage Free Egg Whites
1/4 tsp Cream Of Tartar

DIRECTIONS

Gather ingredients for filling and lets get started!

Grate 1 teaspoon of lemon zest and place in bowl....

Juice 2 lemons and place juice in bowl with zest....

Carefully crack eggs and place yolks in bowl. Put whites aside for now....

Open condensed milk and pour into bowl with other ingredients....

Mix together with hand or electric mixer until smooth....

Pour into pie crust and set aside.

Now for the topping, get your ingredients together!

Pour sugar into bowl....

Add egg whites....

Add Cream of Tartar...

Whip with a hand or preferably an electric whisk until stiff peaks are formed!!!

PRO TIP

Make sure the egg whites are at room temperature - Cold egg whites take much longer to whisk!!

Spoon onto pie filling and bake in oven at 325 F for 15-20 minutes

Allow to cool completely in fridge for 2-3 hours, cut, serve and get ready to have your socks knocked off!!!
