Making blueberry pancakes from the berries in the yard

We have had a great yield on the four blueberry bushes I have. We are finding creative ways of using them and decided to make some pancakes.

Using arrowroot and almond flour, butter and almond milk we made a batter.

We had to add a little more flour to make the batter thick and not be too runny when we fry them.

Whisking it we made it all mix together quite nicely. No sugar added.. the berries will be good enough. We also serve it with a little whipped honey.

After adding the berries the batter was ready to go. We heated up the oil and prepped the got ready to pour batter in the hot pot with oil.

After a few minutes we turned them over in the coconut oil and cooked them for a few minutes on the other side.

We made about half a dozen pancakes, the blueberries bursting open as they were cooked giving the pancakes a red color.

Serving myself some I added some peanut butter and some lemon flavor whipped honey.

Mixed together it was a nice snack. Planning on making more if we have too many for an upcoming pie.. then some more blueberry pancakes are in order.

I really liked how they came out, adding berries such as strawberry, blackberries or blueberries is a great pancake addition.
