Creamy tomato risotto / [PL] Kremowe risotto pomidorowe
And this is our lunch tomorrow :) Keep calm, the picture does not come from the future ;) We have eaten tomato risotto more than once and this is definitely my favorite risotto. Creamy, full of aromatic basil and acidulous tomatoes. It is light, yet filling. I recommend this recipe and wish you bon appetit :)
Ingredients for 3-4 portions:
- 1,5 cups risotto rice (arborio)
- 4-5 medium size tomatoes
- medium size onion
- about 3-4 glasses of good broth (as a last resort make it from stock cube)
- 10 dag hard goat cheese (grated)
- two heaped tablespoons of butter
- spoon of oil
- freshly ground pepper
- a handful of fresh basil
- 1-2 teaspoons of dried basil
- salt
Preparation:
- Scald tomatoes, peel and seed. Cut into cubes about 1 cm side and set aside.
- Peel and chop the onion.
- Heat the butter with olive oil in a frying pan. Add onion and fry for 2-3 minutes, stirring constantly. The onion should be glassy, not browned.
- Add rice, fry and stir until all the grains are covered with butter.
- Add a glass of broth and cook on a medium heat, often stirring.
- Gradually add the remaining broth (after absorbing the previous portion of the liquid).
- After about 15-20 minutes of such cooking, if the rice is already cooked, add grated goat cheese, chopped tomatoes, a tablespoon of butter, a pinch of pepper and dried basil. Stir and set aside for a few minutes.
- Season with salt if needed.
- Sprinkle with fresh basil before serving.

A to jest nasz jutrzejszy obiad :) Spokojnie, zdjęcie nie pochodzi z przyszłości ;) Risotto pomidorowe jedliśmy już nie raz i jest to zdecydowanie moje ulubione risotto. Kremowe, pełne aromatycznej bazylii i kwaskowatych pomidorów. Jest lekkie, ale jednocześnie sycące. Polecam i życzę smacznego :)
Składniki na 3-4 porcje:
- 1,5 szklanki ryżu do risotto (arborio)
- 4-5 pomidorów średniej wielkości
- średniej wielkości cebula
- około 3-4 szklanki dobrego bulionu (w ostateczności może być z kostki)
- 10 dag starkowanego twardego koziego sera
- dwie czubate łyżki masła
- łyżka oliwy
- świeżo zmielony pieprz
- garść świeżej bazylii
- 1-2 łyżeczki suszonej bazylii
- sól
Przygotowanie:
- Pomidory sparz i obierz ze skóry. Pokrój na ósemki, usuń nasiona i sok, pokrój na kostkę o boku 1 cm. Odstaw na bok.
- Cebulę obierz i pokrój na drobną kostkę.
- Na patelni rozgrzej masło z oliwą, dodaj cebulę smaż 2-3 minuty, cały czas mieszając na średnim ogniu. Cebula powinna być szklista, nie zrumieniona.
- Dodaj ryż, smaż i mieszaj, do momentu, aż wszystkie ziarenka pokryją się masłem.
- Dodaj szklankę bulionu, wymieszaj. Gotuj na średnim ogniu, często mieszając.
- Stopniowo dodawaj pozostały bulion (po wchłonięciu poprzedniej porcji płynu). W trakcie gotowania zmniejszaj porcje dodawanego płynu (na początku po pół szklanki, pod koniec coraz mniej).
- Po około 15-20 minutach takiego gotowania, jeśli ryż jest już ugotowany, dodaj kozi ser, posiekane pomidory, łyżkę masła, odrobinę pieprzu, suszoną bazylię. Wymieszaj i odstaw na bok na parę minut.
- W razie potrzeby przypraw solą.
- Przed podaniem posyp porwaną palcami świeżą bazylią.

Nie lubisz nasion z pomidorów?
W większości dań sprawdzają się całe pomidory, ale tutaj musi być sam miąższ, inaczej risotto będzie wodniste. Odpowiadając na Twoje pytanie: lubię nasiona pomidorów ;)
