Burger-like sandwiches with salmon

Here's how to prepare burger-like sandwiches with salmon. First of all you have to clean the salmon well by removing the skin and taking care to remove all the bones. Then pass it to the mixer without grinding it too finely (you can also chop it with a knife).

Mix it in a bowl with mayonnaise, a tablespoon of chopped chives, salt and pepper to obtain a homogeneous and compact mixture.

Helping you with two rings with a diameter of 8-10 cm, shape the salmon medallions: place the pastry rings in a sheet of baking paper on a tray and fill them by pressing the mixture of salmon and mayonnaise. Leave them to rest and compact in the fridge for half an hour.

Heat a little oil in a non-stick frying pan and extract the medallions from the pastry rings carefully laying them in a pan, taking care not to break them. After a few minutes of cooking on one side, turn them with a spatula and let them brown on the other.

Warm up the burger rolls (in the oven, on the plate, in the toaster) and stuff them with the salmon medallion, tomato slices and lettuce.

If you prefer, you can serve the salmon medallions in a dish accompanied by vegetables.
