Coconut Curry Chicken Recipe Win!
I am a lover of curry, especially coconut curry but have always been too afraid to actually try cooking with this spice. Two nights ago I conquered my fear and made coconut curry chicken. It was so delicious, I decided I needed to share the recipe with the Steemit world.
Here is what you need to get started:
Meat
4 chicken breasts or thighs, boneless
Produce
1 large potato or two medium /smaller sized
1 medium sized onion
5 garlic cloves
Canned Goods
1 can coconut milk
Baking & Spices
2 tbsp curry
Salt to taste
Oils & Vinegars
2 tbsp olive oil
Dairy
2 tbsp butter
Cooking Materials
Medium size skillet/pan
Large size skillet/pan
Instructions:
- Chop up onion and garlic. Then chop the potatoes and chicken into cubes and set aside.
- In your large skillet heat up 2 tbsp of butter until completely melted then add 2 tbsp curry. Mix well.
- Once the butter and curry are mixed, add your can of coconut milk and swirl it around until blended. Keep this warm on low heat for now.
- Grab your medium size pan and use olive oil to coat the pan.
- Saute the onions and garlic. Once the onions are translucent, add the chicken cubes.
- Cook the onions, garlic, chicken until the chicken starts to brown.
- Add the cubed potatoes into the curry/butter/coconut milk mix and stir.
- Add the chicken/onion/garlic into your larger skillet with the curry/butter/coconut milk/potato mix. Stir well.
- Raise the heat until it starts to simmer.
- Once simmering, stir one more time, lower heat to medium-low and cover for 30 min.
Optional: Once you cover your curry creation, you can make some rice for a side. I decided to make basmati rice but you can choose any type you like.
Viola! Your coconut curry chicken is ready and waiting to be devoured.
