WARA
What is wara?
Wara is a delicious local nigeria curds mostly made from fresh cow milk. Wara is traditionally made by adding coagulant ( extract from Sodom apple also called bomubomu in Yoruba language) the milk protein is then collected and sold as wara.
Wara is a very popular milk among local area’s in south-west Nigeria, It is presumed to originate from Wara, a city located in Kwara state. In different vicinities, it goes by various names such as; Cottage cheese in America, Paneer in India, Woagachi or Wagassirou in Benin republic, Mashanza in Zaire. In the simplest form, wara is made by curdling milk (animal based milk such as cow/goat milk or plant based milk such as soya milk). The solid part (proteins & fats) is separated from the liquid part (water and whey) after the curdling process and pressed together.
I used to hate this food and wouldn’t have gone near it, beause of how it is been prepared and my poor knowledge about the food, not until when a friend of mine told me about it.
Types of wara
There are two major types of wara sold in Nigeria
- Wara "Milk" (bomubomu) : This is the main one general known in Nigeria and is made from fresh cow milk
- Wara "Soya": This type of wara is not too common and is made from soy milk. It can also be called “Tofu”
Taste of Wara
the taste of wara is better experienced than described, it has this similar taste with a boiled egg, it has this different taste that makes it unique. Some may find the taste of wara bland but with added salt and pepper and other seasonings, its taste is further enhanced.
Health Benefits Of Wara
Wara (milk) it has the same nutrients you can find in yogurt or milk. It's rich in fat, protein and a little amount of carbohydrate and also contains vitamins & minerals such as; calcium, Vitamin B12, Phosphorus, Selenium, Zinc, Sodium, Riboflavin, Vitamin A, Vitamin K2. It also contains good bacteria known as "probiotics" which helps regulate the flora in the gut.
While there are several health benefits, there are also several negative health effects associated with eating too much of it. To avoid such negative effects, moderate consumption is key.
ingredients
Freshly squeezed cow milk
Plant extract of a leaf(ewe) known as bomubomu (calotropis procera)
Giant weed
Conical shaped woven basket
White vinegar
Lemon or lime juice
Apple cider vinegar magnesium chloride
Procedures or steps on how to make wara
To make wara,5 litres of milk would give you about 1 kilogram of cheese
- prepare the juice extract from the leaves. Chop the leaves and pour out half up of water on it and leave it for 10 mins
2.Pour the fresh cow milk into a pot and cook it for 15-30 minutes
3.Sieve the liquid in step 1 above into the milk in the pot.
Keep stirring so it doesn't burn. After sometime, the whey (liquid) would get clearer while the curds (solid) would get larger.
use the woven basket to strain the curds from the whey
Leave the whey to drip out of the cloth or basket and squeeze the excess liquid out.
Then your wara is ready for consumption.
