I love all Home-made because they are special. Today, I am sharing to you a simple and delicious home-made soup from scratch.

We have to be resourceful and a little creative with everything and that includes cooking. We try to go out as little as we can, and away from the crowd (to help flatten the curve). My food shopping trip goes once a week. I check everything in the fridge what's available and not.

And this all i have, few bits and goodies. It's time for food shopping. But before I head to the supermarket, let me get use of the left vegetable in the fridge.

Mushrooms, celery, green beans, carrot, small cabbage and a handful of coriander leaves. That would make a soup! I could even make a quick stir-fry, but I will settle with soup. Nice and comforting.

Nothing fancy in this one. I have just put them all together (harder one's first), except the coriander leaves.

Ingredients

  • Mushrooms
  • Onion
  • Celery
  • Carrot
  • Cabbage
  • Green beans
  • Coriander
  • Peppercorns
  • Salt and ground pepper

Procedure

  1. Chopped carrot, green beans, mushrooms in bite-size pieces. Crushed the celery (to release more flavour) and chopped. Shred the cabbage and chopped the coriander herb.
  2. Place them in a pot with water.
  3. Let it boil and simmer for 15-20minutes.
  4. Season with salt and pepper.
  5. Off the heat and add your coriander leaves.
