Underrated dishes which are best sellers #5.3 The shawarma Wrap

The Shawarma or Shaurma or doner Kebab or Gyro wrap. All these are basically flat bread wraps with greens, pickle and mayo dressing along with grilled meat- most popularly chicken. Cooked on stands with vertically placed grills this is staple take away meal for many.

This is my recipe for a homemade Shawarma wrap.

I prefer the Roti to pita bread because it is thinner and can be made or bought easliy.
I also ditch the garlic mayo for a sour cream Garlic Sauce- less calories and amazingly better:
For 1 large cup (250 gms) of regular sour cream you need to add

• 3 cloves garlic chopped and sauted in 3 tablespoons of olive oil (olive oil- popeye fans can smile). Olive oil actually enhances the taste. And we need to add this mixture of garlic and oil to the sour cream.
• 1 table spoon cashew paste/ crushed cashewnuts
• 1 tea spoon lime juice
• 1/2 teaspoon crushed white pepper
• Salt to taste.
  Mix all and set aside

The veggies: sliced cabbage, pickled beet and cucumber and thin french fries
The chicken: Breast pieces (500 gms) sliced and Marinated. For the marination slice the chicken breast into strips.

For the marinade:

1/4 Cup Malt vinegar
1/4 Cup Plain yogurt
1 Tbsp Olive oil
To taste Salt and pepper
1/4 tsp Freshly ground ginger
1 tsp All spice
1 tsp paprika paste/ chilly paste
1/2 tsp soy sauce

In a large add chicken and the marinade and mix well. Set aside for at least 2 hours. Grill the marinated chicken on a skillet on medium heat, letting the oil and vinegar cook through before evaporating. When the chicken browns put the strips on a chopping board and slice them into smaller pieces.

Assembly:
Warm the roti and place it flat in the center of a butter paper sheet larger than the roti (the paper is only to help you roll). Add the garlic sauce generously, add cabbage and 3-4 sticks of pickle. Pile chicken on top and 3-4 french fries. Roll the roti along with the paper so it closes comfortably.
Press it close and scrunch and twist the paper at both ends. Cut in the middle and serve.
