Gazpacho is a very healthy food usually eaten as a starter. It is especially recommended for the hot days of the summer as it is served cold. All the ingredients are natural and it is very easy to prepare.

Ingredients


  • 1kg of fresh midsize red tomatoes.
  • 1 garlic clove
  • 50 gr of red pepper
  • 40 gr of onion
  • 70 gr. of cucumber (you can use carrot if you prefer)
  • 40 ml of vinegar
  • 70 ml of extra virgin olive oil.
  • 1 teaspoon of salt
  • 250 ml of water
  • 1 small piece of bread (1/5 of french baguette preferable) 

Preparation

Leave the bread inside a bowl of water to make it soft. Introduce all the ingredients, except for the water, in the mixer and mixt strongly at maximum speed for about 3 minutes. Then add the water and mix again at maximum speed for 2 additional minutes. Leave the Gazpacho in the refrigerator at least 1hr before serving. You can add small pieces of bread when served or just eat it directly.
