Chocolate Mousse Surprise

Everyone loves chocolate and this tasty little mousse does not disappoint. I must confess, I haven't made it in a while probably because dark chocolate is part of my daily diet - naughty but nice!

Ingredients:
170 g dark #chocolate (I use 55% minimum cocoa)
500 ml double cream
1 large egg white
75 g caster sugar
and the surprise
1 shot of Baileys Irish Cream (or the equivalent)

Method:
1 Break the chocolate into small pieces and set aside (without eating any!).
2 In a small saucepan, heat half of the cream until it begins to simmer.
3 Turn off the heat, add the chocolate pieces and stir until the chocolate has melted (a nice smooth mixture).
4 Pour the mixture into a bowl set over a basin of iced water and add the rest of the cream and the Baileys.
5 Using an electric or hand whisk, beat the mixture to soft peaks.
6 Remove from the iced water.
7 Meanwhile, whisk the egg white until there are stiff peaks and add sugar (a tablespoon at a time). Continue whisking to a soft meringue.
8 Carefully fold the meringue through the chocolate mixture and it is now ready to serve (by spoon or piping bag).

Serving Suggestions:
I normally serve in glasses and make around 8 portions.
Sprinkle the top of each personally made dessert with grated chocolate or whatever you desire.
You can mix it up a bit and change the #liqueur to one of your choosing. Swap the toppings to suit the flavour.
Serve immediately (I prefer it chilled a little) or it will keep in the fridge for a couple of days enjoyment.

Don't eat it all at once or drink that huge bottle of Baileys!
