Banana-apple muffins
Muffins with a banana and an apple. Fast healthy breakfast or
afternoon snack. It's good to give your child to school with you. This
recipe can be used not only for muffins, but also for baking cake or
sweet bread. Just baking time in this case will increase.
2 cups of flour
1 tsp soda
1 tsp salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
100 g of butter
1 cup of sugar
2 eggs
1 tsp vanilla
3 tablespoons kefir
1 cup of ripe bananas, mashed in puree
2 apples - peel and finely chop
Preheat the oven to 190 C. Lubricate and sprinkle with 24 flour muffin
molds, or use paper molds. Sift together the flour, soda, salt,
cinnamon and nutmeg. Set it aside.
In a large bowl, whip the butter and sugar until the mixture is light
and fluffy. Add egg whites one by one, and then add vanilla and
yogurt. Add, whipping, flour mixture until everything is almost mixed.
Add the mashed bananas and chopped apples. Fill each mold for muffins
somewhere 2/3.
Bake in preheated oven for 20 - 22 minutes, or until the match
inserted into the center, will not go out clean. Allow to cool
slightly and remove from the molds
