Glabooni shrimp fritters

INGREDIENTS
20 cooked pink shrimp
100g of flour
50 g potato starch
1 sachet of baking powder
70 cl of frying oil (grape seed preferably)
Sauce for nem
soya sauce
1 Tablespoon of olive oil
1 pinch of salt
PREPARATION
STEP 1
Mix the flour, starch and yeast. Put the salt and olive oil.
STEP 2
Add water (not too much), mix to obtain a donut dough (correct the amount of water if necessary).
STEP 3
Leave to rest in the fridge.
STEP 4
Heat the frying oil, peel the shrimp and leave the tail.
STEP 5
Take the shrimp one by one by the tail, soak them in the dough and put them in oil.
STEP 6
When cooked, put on absorbent paper.
STEP 7
Put sauces in small bowls and serve quickly.
