Corn fritters

Ingredients :
2 eggs,whisked
125ml (1/2c) milk
60ml (1/4c) finely chopped parsley
500ml (2c) self-raising flour
Salt and freshly ground pepper
1 can (410g) whole kernel corn
250ml (1c) peas
Oil for deep- frying
Method :
- Fritters Whisk together the eggs, milk and parsley.
- Put the flour in a large mixing bowl and season with salt and freshly ground pepper.
- Make a well in the middle of the seasoned flour and pour in the milk mixture. Beat until blended and stir in the corn kernels and peas.
- In a pan heat enough oil for deep- frying. Drop spoonful of the fritter mixture in the oil and fry until golden on both sides and cooked in the middle. (Make sure the oil isn't too hot or the fritters won't cook through.) Drain on paper towel.
