Steamed Fish

Hello everyone! How are you all today? I hope your day is great and that you’re having fun. Today, I wanted to share this recipe with you. I cooked this the other day for my dinner. And for this recipe, I used (yeah, again) the Pompano fish as it is one of my favorite fish besides flounder. You can actually use any kind of fish for this cooking. Whatever kind of fish that’s your favorite or that’s available will do just fine. Do try cooking this food and see how it tastes for you. I personally, enjoyed steamed fish. It is delicious and it fills my hunger all the time. Have a great day and keep on cooking.

Ingredients:

1 Florida Pompano, or any fish, large and scored
2 ginger bulbs, cut in strips or julienned
2-3 stalks of green spring onions, julienned
1 can (4 oz.) Giorgio sliced buttons mushrooms or fresh mushrooms
4 oz. Mezzetta roasted bell pepper strips, deli-sliced
1 stalk celery, diagonally sliced
2-3 stalks sweet baby broccoli, separated
1 tsp. Johnny’s seasoning salt
3 ½ c. water for steaming
⅓ c. teriyaki marinade sauce or oyster sauce
1 tsp. sugar
2 tbl. olive oil
¼ c. water
1 tbl. cornstarch
1 tsp. sesame oil
1 tsp. black pepper
1 bundle of cilantro

Sprinkle the fish with Johnny’s seasoning salt on both sides. Put on a plate and set aside.

In a wok, put the 3 ½ c of water. Place the rack on wok.

Prepare a base for the fish by arranging few of the following in a steamer plate: ginger, celery, green onions, mushrooms, broccoli, roasted bell peppers, and cilantro.

Place the fish on top of the vegetables. Also add a few of the vegetables on top of the fish. Then set the remaining vegetables aside in a bowl.

Place the steamer plat on top of the rack and cover the wok and let it steam for 30-40 minutes. You may turn over the fish once, half-way through.

Combine and mix teriyaki sauce, sugar, and sesame seed oil in a small bowl and set aside.

Dissolve cornstarch with ¼ c. water in a small cup and set aside.

In a small frying pan, heat the olive oil and saute ginger, and all of the remaining vegetables and season with pepper. Cook for about 3-5 minutes. Remove and pour this on top of fish. Cover and steam for 5 minutes.

In a small sauce pan, pour the sauce mixture to a medium boil for about 30 seconds and then add the cornstarch mixture to thicken the sauce. Then add the combine thickened sauce mixture to the fish and let it steam for 5 minutes more.

Finally, remove the fish and transfer to a serving platter. Serve with rice.
