I was just in one of these places for the first time last week. I've had the dish at Japanese restaurants before, but this place was pretty much exactly like what you show in your photos. It's weird because they say they're not a chain, but apparently they all have the same setup?
I think these poki places are a bit of a fad, there are also a lot of local chains.
