Delicious and Healthy No Pasta Shrimp Pesto
This dish quickly became one of my favorite recipes. It's not only delicious but very nutritious! This dish substitutes starchy carb and calorie filled pasta with a healthier plant based alternative.
Instead of spaghetti I used spaghetti squash and it was so good my husband asked if I can make more of it. You can make your own pesto sauce which is pretty easy, but for this recipe I used a Costco brand. In my opinion its just as good!
First you need to buy a good size spaghetti squash
Preheat your oven to 375 degrees.
Cut off each end
CAREFULLY cut the squash in half. It can be a little tricky so be careful. Take a spoon and scrape out the insides
Season your squash with your favorite spices. I used garlic salt and pepper. After seasoning your squash you can either spray it with nonstick spray for healthier alternative or brush olive oil for a tastier alternative. Make sure to spray your baking sheet with nonstick spray as well.
Bake the squash face down for 35-45 minutes
Once your squash is cooked take a fork and start scraping the flesh of the squash. You should see strings of "spaghetti"
Sautee a medium red or white onion and 6-7 cloves of garlic in 2 Tbs of olive oil.
Once your onions are translucent add a pound of shrimp and seasonings (I use salt, pepper, and garlic powder)
Once your shrimp is cooked, about 8-10 minutes on medium heat, add your spaghetti squash. Incorporate the two together.
Add about a cup to a cup and a half of basil pesto sauce.
Et Voila! There you have it. A yummy delicious and nutritious meal!

It was pretty tasty! You can literally try it with different meat and sauce variations!
I'm gonna have to try this this weekend. I just picked my first spaghetti squash today.
