HOW TO COOK DELICIOUS MEAT DUMPLINGS (Original Pelmeni Step-by-Step Recipe and Photoshoot)

Long time ago when I was younger so much younger than today I’ve been to a big birthday party. At some moment I found myself surrounded by a bunch of pretty young ladies. “Girls, who is capable of cooking dumplings?” I asked them. Roughly a half of them answered that I will never find that much stupid girl that will take her time to cook dumplings for me. And another half told me that it’s very easy–“Sure, you just have to throw them into the boiling water…”

Do you like dumplings? If so, try this recipe and you will get the best meat dumplings ever!

Ingredients (around 100 dumplings)

For the dough:

  • 400ML (2 cups) fine wheat flour;
  • 50g vegetable oil (sunflower preferably);
  • 250ML (1 cup) boiling water;
  • 1-2 chicken eggs;
  • ½ teaspoon salt;

For the filling:

  • 400g (1lb) ground pork;
  • 400g (1lb) ground beef;
  • 1 onion minced;
  • black pepper;
  • 1 tsp salt.

Instruction

Sift 350ML wheat flour into a big pan as a hill. Add oil to make a small volcano. Then add a cup of boiling water and mix starting with a spoon and then with hands. When it cools off a little add an egg, salt, the rest of flour and form a ball. Put it into a bowl covered or a plastic bag and put aside for an hour.

Meanwhile mix meat in a pan, add an onion, pepper and salt. Smooth and roll out the dough (around 5 mm thick), use a cookie cutter or simply a glass to cut out dough rounds (similar to this recipe of mine). Put filling on dough rounds and wrap them (roll and seal). Put aside on a surface with some flour scattered and repeat. And again, if you have kids–they should be willing to gladly help you with this stage. With all the ingredients above I had around 100 dumplings ready (you can intermix dumplings with the flour and put some into the fridge to cook later).

For boiling the dumplings you will need a big pan. Add some bay leaves, and a tablespoon of vegetable oil and salt, wait until the water starts simmering and drop the dumplings, cook in batches of 20-30. When all of them are already floating (around 5 minutes) let them cook for some 3-4 minutes. Take out with a skimmer, add some butter.

Serve while hot with sour cream (tomato sauce, ketchup or mayonnaise). Enjoy!
