Donut Potatoes
Ingredients :
- 250 gr high protein flour
- 25 grams of milk powder
- 6 gr instant yeast
- 100 gr steamed potatoes (puree and chill)
- 50 grams of caster sugar
- 35 gr butter
- 1/4 tsp salt
- 2 egg yolks
- 50 ml of cold water
How to make :
- Mix flour, milk powder, refined sugar and yeast. Mix well.
- Add smooth potatoes, add egg yolks and add water little by little while kneading until smooth and half-smooth.
- Add salt and butter, continue kneading until smooth and elastic. Let stand for about 20-30 minutes, cover with a damp napkin so that the dough does not dry.
- Squeeze the dough, divide and round shape (I divide it into a weight of about 45 gr). Let stand for approximately 20-30 minutes.
- Fried donuts on medium heat tend to be small to brown.
- Lift and drain. After being cold, you can give toppings according to taste.
