Great article! I've watched Bourdain and other chefs talk about the Vietnamese cuisine, and it's been on the top of my list for quite some time now. I'm a huge foody and the Asian culture has had my attention the last year or so. Their fish sauces especially, the richness and saltiness really compliments the meals perfectly. Well written, hope to see more! Other than Vietnamese, what's you next favorite Mideast cuisine?

You mean the middle east cuisine? Actually Im not fan of the middle east so cuisine from this region doesnt impress me much. Besides Vietnamese, I love Thai, japanese food as well. I might post something about Thai food in the next post ^^ btw thanks for your comment <3
Yea that was a typo for some reason. No idea why wrote Mideast when I meant eastern, more specifically The pacific region. I have an uncle staying th the Philippines for a little bit, he lives right on the coast and gets a lot of fresh seafood, even the strange looking ones. And lots of pork, pork is the mainstay of almost all cultures now isn't it!
Yay, not only phillipines but other countries that have coast, have the fresh seafood too. Seafood there is fresh, tasty and CHEAP. I'd love to try the strange looking ones too, have you tried the sea urchin? As for pork, im not a big fan, but asian cuisines do have some good food with pork, for example the Bun Cha dish i mentiones above ^^ what's your favorite dish ?
Funny you mention sea urchin, I tried it when I was on vacation in Italy. We went out to the tremiti islands and picked it off the seafloor. Ate it right in the dingy!! Was crazy good! But my favorite dish is an American fish fry. Probably because it's home to me.
Ive never been to America, but if i have a chance, you must tell me where to try your favorite dish :D
