Mung Beans(Green Beans) Ulathu served with cooked carrot and Kanji(Rice porridge)

Mung Beans or Green Beans are a high source of nutrients including manganese,potassium,magnesium,folate,copper,zinc and
various B vitamins.They are also a very filling food ,high in protein,resistant starch and dietary fiber.
Because of the high nutrient density ,mung beans are considered useful in defending against several chronic ,age related diseases including heart disease,cancer,diabetes and obesity.
Clinical evidence continues to show that plant derived foods have various potential health benefits, including lowering inflammation.Health experts recommend that plant based foods make up a large portion of every person's diet, and many world wide health organisations have recommended an increase in the intake of plant derived foods to improve health status and to prevent chronic diseases.
Among the plant -based sources of protein and nutrients,mung beans are one of the foods gathering most attention.
One cup cooked mung beans contains the following(percentage based on the RDAs for the average adult female)
212 calories
14 grams of protein
15 grams of fiber
1 gram of fat
4 grams of sugar
321 micro grams of folate
97 milligrams of magnesium
0.33 milligram of vitamin B 1 thiamine
0.6 milligrams of manganese
7 milligrams of zinc
0.8 milligrams of vitamin B 5
0.13 milligrams of vitamin B 6
55 milligrams of calcium.

Main ingredients for all 3 dishes:

Mung Beans (Green Beans) -3/4 c
Carrot - 1 or 2
Parboiled,slightly polished rice - 1/2 c

Mung beans or Green beans Ulathu

Ingredients:

Mung beans - 3/4 c
Onions - 2
Shallots -10-12
Red chilly -1-2
Garlic -3-4 cloves
Powdered black pepper - 1 tsp
Curry leaves -2 stalk
Cooking oil -2 tbsp
Salt -to taste

Method:

Cook the beans with salt ,in water until soft.

Chop onions,shallots and garlic.
Cut the red chilly into pieces.

Heat the oil and put red chilies ,curry leaves stir and put chopped onions and shallots and saute well.

Add chopped garlic and powdered black pepper and stir.
Add cooked beans into this and stir carefully to mix everything.

Dish is ready to use.

Cooked Carrot:

Scrape the carrot,cut into long pieces and cook with little salt.

Kanji(Rice porridge):

Cook the rice in more water until very soft,and add salt. There should be enough water left in rice for serving.
The dish can be served hot .

Note :This meal is easy to digest. So it can even be used as a therapeutic meal.
