Prepare a delicious Moroccan Traditional Tajine

The tajine is the most delicious traditional dish in Morocco, It is aptly named after the typical utensil in glazed earthenware in which it is slowly cooked with charcoal, a tourist who will visit Morocco and do not eat Tajine will miss a great opportunity to enjoy a wonderful meal that will never find anywhere in the world.

In the following I will show you how to prepare it in detail, try it at home and you will surely not regret.

Ingredients :

  • Green Olive + 1/2 glass of virgin olive oil

  • Spices (including nutmeg, ginger, coriander, cinnamon ...) + Yellow saffron (for coloring) + Salt

  • A small glass of water

    Step 1


    To envisage a traditional dish 'TAJINE' (to put on electric plate or flames)

    3/4 tablespoon oil in the tajine dish directly on the fire or plate.

    When the oil is hot, fry the meat on each side (about 10 min).

    Step 4


    Reduce the heat a little and place the vegetables, washed and cut roughly, in a pyramid on the meat, from the firmest to the most tender (potatoes, then carrot, then zucchini, then onions), by interposing cumin, 14 spices , salt and pepper.

    Sprinkle with a little water, sprinkle with yellow saffron, to give color and to deposit the green olives.

    Cover and cook on low heat for 30 minutes.

    At the end of this time, place on the cooked vegetables, the tomatoes cut into pieces, cover and cook for another 15 minutes.

    Serve hot, directly on the table.

    How to taste it :

    Traditionally, tajine is eaten on the dish, by hand, by catching vegetables with pieces of bread. This recipe comes from a small Berber woman met in a Moroccan village of the Atlas.
