Angels on Horseback
Traditionally Angels on horseback is a hot hors d'œuvre or savoury made of oysters wrapped with bacon. The dish is typically prepared by rolling shucked oysters in bacon and baking them in an oven.
This however is the poor man's Angels on Horseback...no oysters, instead we use pork sausage filling.
Ingredients:
65 g (1/4 pack) Pro-Vitas
300 g pork sausages, casings removed
45 ml finely chopped parsley
45 ml sweet chilli sauce
Salt and milled black pepper
250 g streaky bacon
200 ml bought sweet and sour sauce
90 ml chutney (mild or hot)
1 whole spring onion, finely sliced
Directions:
Place the Pro-Vitas in a food processor and process into coarse crumbs.
Tip the crumbs into a mixing bowl and add the sausage meat, parsley, sweet chilli sauce and season lightly with salt and pepper.
Roll into balls the size of large walnuts.
Cut the bacon strips in half lengthwise and loosely roll a piece of bacon around each ball.
Don’t wrap too tightly as the bacon will shrink during cooking.
Secure with toothpicks if necessary.
Place the parcels on a baking sheet with the seams at the bottom.
Bake in the oven preheated to 200ºC for 10 – 15 minutes or until the meat is cooked through.
Meanwhile, combine the sweet and sour sauce, chutney and spring onion and serve with the warm parcels.
Makes about 24.
