How To Make Nigerian Doughnut (Donuts)

Nigerian Doughnut is a rich texture and delicious snack, it is cut into ring shapes and sometimes filled with jam (marmalade) and then deep fried.

It is similar to Puff Puff but the butter and milk in Nigerian Doughnut recipe, makes it richer in flavour and taste.

Below is a detailed and easy recipe to make Nigerian Doughnut, that is crunchy and yummy.

Ingredients For Nigerian Doughnut:
• 480g of plain flour
• 2½ tbspns dry yeast/15g fresh yeast
• 25g melted butter or margarine
• 5 tablespoons of warm water
• 1 teaspoon of salt
• 50g of sugar
• 1 big egg
• 180ml warm milk (or 2 tbspns powdered milk, dissolve in 180ml of water).

Preparation Of Nigerian Doughnut:
• In a small bowl, add the yeast, 3 tablespoonful of flour, 5 tablespoons of warm water and mix together.

• Cover and leave in a warm place to rise and double its size. When it begins to form small bubbles in it, keep aside. This kick-starts the rising process of the dough.

• Into another large bowl, add the remaining flour, sugar and salt then mix properly. Add the egg, warm milk, melted butter and the yeast batter (starter).

• Mix thoroughly for about 10 minutes, then fold the sticky dough into a rough ball and place in a greased bowl.

• Cover with a clean napkin or nylon, tilt to one side and leave for about 1 hour or till the dough doubles it size.

• When the dough has risen, place on a floured table, flatten with your palms (or a rolling pin) and rub a little flour on the sticky flattened dough.

Kitchen Tip: If the dough is too sticky for your liking, you can add a little flour and fold it into the dough.

• Now using a biscuit cutter or the wide top of a glass cup, cut the flattened dough into doughnuts rounds.

• You can use a syringe (without the needle) to fill the Nigerian Doughnuts with jam, you can also do this after frying them.

• If you want very large Nigerian Doughnuts, you can leave them to rise for another 20 minutes before frying.

• Heat up the oil until its very hot, about 180º C. Fry the Nigerian Doughnuts in the oil till each sides are golden brown then transfer into a sieve, lined with paper towels, to absorb excess oil.

• That's it, your Nigerian Doughnut is ready. Serve with zobo, kunnu, soya milk or any drink of your choice.
