Today I wanted to share one of my favorite easy meals we make frequently at home. We eat a lot of rice and beans so keeping things tasty is important. Two of my favorite seasonings are chili and curry powders since they have so many amazing health benefits.

You will need:

  • 2-3 fresh eggs
  • 1 cup water
  • 1 cup rice
  • 2-3 tablespoons fresh salsa
  • 1/4 teaspoon cooking oil or bacon grease
  • 1/8th teaspoon curry powder
  • 1/8th teaspoon chili powder
  • 1/8th teaspoon sea salt

Start by combining the rice, water, chili/curry powders, and sea salt in your rice cooker. Stir everything up and you are ready to let the rice start cooking. If you don't have a rice cooker, you can use conventional methods.

When the rice is close to being done, start preheating your skillet for the eggs. I like to use a cast iron skillet and keep the heat on low-medium. After the skillet has preheated add the cooking oil or bacon grease. Crack the eggs into the skillet and cook to your desired preference. This process shouldn't take more than 5 minutes.

While the eggs are cooking, spread the rice out on a plate. Then, when the eggs are done, lay the eggs out over the rice. Now you're done! Just add some of your favorite salsa on top and you have a delicious, inexpensive meal perfect for any time of day!

We eat lots of rice and beans too. We usually have them mixed as a dish called Gallo Pinto (spotted chicken) with eggs and fresh cheese. We add the salsa on top but I like your recipe because it seems a bit spicier We would probably kick it up another notch by adding some avocado and some sour cream. Decadent eating!
